Ο Γεώργιος Χώτος είναι απόφοιτος του Βιολογικού Τμήματος του Πανεπιστημίου Πατρών, ειδικεύθηκε στην ιχθυολογία με σπουδές Master of Science από το πανεπιστήμιο Mie της Ιαπωνίας και ακολούθως με τη διδακτορική διατριβή του στη βιολογία των ψαριών από το Πανεπιστήμιο Πατρών. Από τα πρώτα καθηγητικά στελέχη του τμήματος Ιχθυοκομίας-Αλιείας του πρώην Τ.Ε.Ι. Μεσολογγίου στο οποίο υπηρέτησε από το 1986. Δημιούργησε εξ’ αρχής το εργαστήριο ενυδρείων και το εργαστήριο καλλιέργειας πλαγκτού (1989). Εχει ασχοληθεί με όλες σχεδόν τις ιχθυολογικές δραστηριότητες (εκτροφή, συλλογή γόνου, ιχθυολογικές μελέτες, ιστολογία, κ.ά.) καθώς και με υδροβιολογικές (περιβαλλοντικές μελέτες, καλλιέργεια πλαγκτονικών οργανισμών, κ.ά.) Εχει συγγράψει πλήθος συγγραμμάτων για χρήση των προπτυχιακών και μεταπτυχιακών φοιτητών καθώς και βιβλίο για τη θαλασσινή ιχθυοκαλλιέργεια. Σήμερα δραστηριοποιείται κυρίως στη μελέτη των μικροφυκών καθώς και των υδρόβιων μικροασπονδύλων. Είναι διευθυντής του θεσμοθετημένου εργαστηρίου “Εκτροφής Υδρόβιων Οργανισμών”. Κατά το παρελθόν έχει διατελέσει επί 8 χρόνια προϊστάμενος τμήματος, 2 χρόνια διευθυντής σχολής και 6 χρόνια αντιπρόεδρος Τ.Ε.Ι.
